Oaty Jam Coconut Slices (dairy free, egg free, nut free, soya free, gluten free, vegan)

Little one and I have been creating Oaty Jam Coconut Slices in the kitchen this week, using goodies from our Sainsbury’s Deliciously Free From hamper. Not only are they really easy to make but they are also free from dairy, eggs, nuts, soya, gluten and wheat! Plus they are vegan too!

As you may know from my previous posts, I am a big fan of making recipes that little one can get involved with. This one is perfect for little hands to help with. The recipe isn’t complicated, with only five ingredients. It also provides lots of opportunities for little one to help. She was a big fan of pressing the oaty mixture into the tin. She also loved helping to spread the jam across the oat layer.

It is also a fairly healthy recipe, with ways to make it even healthier (and refined sugar free):

  • Substitute the Strawberry Preserve for Strawberry Chia Jam
  • Use crushed berries rather than berry jam
  • Replace the dairy free spread with melted coconut oil (quantities may change)

The recipe could also be easily adapted to include different fillings. Apricot jam would make a delicious filling. Cooked apple and blackberries would give a lovely autumnal twist! You could also add some free from chocolate chips to the oaty mixture! The use of coconut flour and coconut sugar gives a subtle coconut taste. Adding desiccated coconut to the oat mixture would make these even yummier!

We enjoyed these as an afternoon snack, me with a cup of tea. They would make perfect picnic treats or a yummy lunch box filler.

Instructions
  1. Pre heat the oven to 200c and line a square baking tray with baking paper, roughly 20cm x 20cm. Pop to one side for later.
  2. Pour the melted dairy free spread into a large mixing bowl, stir in the coconut sugar until mostly dissolved.
  3. Add the oats and coconut flour into the spread/sugar mix and stir until mixed through.

  4. Tip half of the oaty mixture into the lined baking tin and press with the back of a spoon to make an even layer.

  5. Then spread the jam across the oat layer, making sure it reaches the edges.

  6. Carefully top the jam layer with the remaining oats, and even out with the back of a spoon. Pop into the oven to bake for 10 minutes. Remove when the oats begin to brown and leave to cool in the tin.

  7. Once almost cooled, lift the oaty jam coconut bake out of the tin, cutting into 10 slices. The sllces will still be squidgy so allow to fully cool to harden up.
